Can we save these living fossils? Sturgeons once swam with the dinosaurs, but their populations have dropped 94 percent globally since 1970 due to overfishing and habitat disruption. Now, scientists and the caviar industry are working closely together to create legal aquaculture and rebuild their populations. From breeding and hatchery programs that help raise sturgeons in safe environments before releasing them into the wild, to transport initiatives that help move the fish to suitable habitats, these efforts are crucial to restoring sturgeon numbers.
