In search of the increasingly rare, old-school joints that still cook barbecue the way it’s been made in North Carolina for centuries, the writer Ingrid Williams went to the lively college town of Greenville. She proceeded to nearly eat her weight in pulled pork, coleslaw and hush puppies. Williams wasn't just looking for any kind of barbecue, but what's known as “eastern North Carolina” style. Think whole hogs, smoked low and slow over wood, served in a peppery, vinegar-based sauce.
